Stuffed Brownie Truffles

Ok, you need make these.
Not because they're yummy.
Not because they're cute.
But because they are EASY!
I promise.  The hardest part here is the dipping in the candy coating.  But lucky for us, these truffles are wearing a cover up...pretzels.
The pretzels are like your favorite beach sarong...there to accentuate the positives and disguise the lumpy bits.
I have a friend who challenges me on a daily basis about my definition of the word "easy".
I guess when you're baking on an almost daily basis your version of easy gets a little skewed.
But I promise you that these are easy and yummy and cute and people will think you're super fancy because you made truffles.
 Let's go...
It all starts with a brownie mix.
I normally bake brownies in a 9x9 because I like a thicker brownie, but bake these in a 9x13.  They will bake and cool faster.
Bake your brownies according to package directions and let cool completely.
When brownies are cooled trim off the hard edges.
What you do with these edges is up to you, but I won't judge you if you eat them all...not because that's what I did...*cough cough*
Then mash 'em up.
You won't need to add frosting or any other binder because these brownies are really fudgy and hold together with no problem.
One box of brownies will make *roughly* 2 dozen truffles.
Now unwrap your Rolos.
If you are from Uranus and don't know what Rolos are..they are delicious chocolate covered caramels.
(do you know how long I have been waiting to slip Uranus into a post?  hehe)
Now form your truffles...
They hold together really well, so I didn't find that I needed to chill the truffles before dipping...but I am sure you could with no problem.
I chopped about a cup of pretzels to use as the topping...
I melted 6 oz of white almond bark with 1 Tablespoon of vegetable shortening (to thin it a bit) over a double boiler.
Then I dipped each truffle in the candy coating, tapping off the excess, and placed it on a waxed paper lined baking sheet.
Immediately sprinkle your crushed pretzels on the dipped truffle because the candy coating sets very quickly and you want the pretzels to stick.
They will be ready to go in 10-15 minutes!
That's it!
So delicious and so many possibilities! 
I can't wait to play around with this idea of the stuffed truffle ;)

Ok, really? I almost jumped out of my seat! I saw the title Brownie Truffles and I was like, "Ok, interesting" and then I scrolled down a bit and saw "with a Rolo Center" and I swear I got giddy. Must try immediately!!

LMBO..Uranus. Why is it no matter how mature I try to be, that word never fails to crack me up. (I think raising four boys has something to do with it)

I have everything but the Rolos. I guess a trip to the store is in order. That means wandering the candy aisle and probably coming home with more than Rolos...not that that's a bad thing. :)

Yup rolos in brownies are a superb invention. Try topping them with straight sea salt next time...so delish!!! And uranus...so hilarious and random. Love it!

Oh my hell!!! I need to make these RIGHT NOW!!! I've never thought to make truffles with brownies. I've seen it done with cake and frosting (I think you alluded to it in the post) but this sounds even better. And, Rolos and pretzels are the best combo on the planet. I make what we call Reindeer Bellybuttons at Christmas time. I'm sure you've made them, but maybe you call them something else.

(Just in case you haven't - You put Rolos in the middle of a pretzel ring, then pop it in the oven on a cookie sheet for a few minutes, til the chocolate is shiny/melty. Then take them out and press an M&M into the middle of the Rolo, pressing down to make sure the Rolo touches the sides of the pretzel. Let them cool, then enjoy! That's the "original" recipe, but now I make them on pretzel 'grids' [from Snyder's] which is even better. It gives a higher pretzel to Rolo ratio. ;-) YUM!!)

These DO look easy, although I hate the dipping part. Mine never come out pretty...I'll have to try it with the pretzel "sarong." Haha!
