Avalanche anyone?


It's still winter.
Still.
There are times that I enjoy living in the Northeast.  Today is not one of them.
I grew up predominantly in Texas.  The Lone Star State.  Ahhhh.
I love Texas.
But, love brought me to New Jersey.  Love blinds you.  It's a fact.
I didn't really think twice about moving up North, because, seriously,  those Texas summers are never ending, but they say, "you don't know what you got, till it's gone..."  (♪ Thanks Cinderella! ♪)
Right now, I would take those summers over this crazy cold any day of the week.
I sleep in so many layers that it would take my husband 15 minutes to get to skin...that is if I was in the mood...but winter makes me too cranky.

I see my toes only in the shower, which is probably a good thing because my cute little digits are neglected this time of year.  And the paleness of my thighs is not cute y'all.
Also driving in the snow...NOT a fan.  When I first moved to NJ I had to take the written portion of the driving test to get my license transferred.  I failed.  There was a whole group of questions about studded snow tires...Studded snow what?  I had no idea.  
So, at the risk of sounding like a major brat I must end the complaining. 
Say something nice...nice, hmm...New Jersey has great ummm, great ummm...autumns? and Italian food.  Yes, definitely going with the Italian food.  Fall being a close second.
There, we're even.
Now, this post is all about cold and snow, so why not have an Avalanche bar?
This deliciously addictive treat was introduced to me at a place called The Rocky Mountain Chocolate Factory.  Ever been there?  They have shelves and shelves of delicious looking candy apples and homemade fudge that I would always be THIS close to buying...but being a bit of a cheapskate I always went for one of the least expensive thing there...the Avalanche bar. At like, $3.50 it was still overpriced, but oh so worth it.  A strange but wonderful combination of white chocolate, peanut butter and marshmallow it is like rice krispie treat on steroids!  Unfortunately, the RMCF closest to my house has since closed, so I was without by beloved Avalanche Bar.
Until now.
I have no idea why I would have ever spent so much money on these treats when they are so simple to make.  All you need is a microwave and a bowl and you are set.
Oh yeah, and the ingredients...duh.

12 oz bag of White Chocolate Chips
1/4 cup creamy peanut butter
3 cups Rice Krispies, or "Puffed Rice" if you're buying generic
1 1/2 cups mini marshmallows
1/4 cup mini chocolate chips + 2 Tbsp for garnish.

Lightly grease a 9x9 pan (or 8x8 if you prefer thicker bars)

1.  In microwave-safe bowl dump in white chips and heat on med power for 1 minute.  Stir and continue in 30 second increments until chips are melted.

2.  Combine the peanut butter with the melted chips
3.  Add the krispies.
4.  Let cool approx 15 - 20 minutes stirring every 5 minutes or so to help cool.
5.  Add the marshmallows and the mini chocolate chips and stir to combine.
6.  Dump mixture into the prepared pan and spread evenly, pressing lightly with the back of your spoon, but do not compact too much, otherwise they will get hard.
7.  Press the remaining chocolate chips into the top for garnish.

When the bars are completely cooled cut into squares and enjoy!
These will be the only avalanche that I will ever love :)

Hmmm, they sound pretty good. I do though think that I would prefer them with out chocolate.

I'm in FL, also known as the Sunshine State, so I can relate to perpetual summer. :)

They look really yummy! Shame on you for adding in the link for Rocky Mountain Chocolate tho. Now I have to go and buy some caramel apples and have them shipped to my house. We have nothing like that around here!

Girl! These sound TOO good. I'll definitely try these out. I always raid those candy stores in the airports, but rarely got past trying anything other than the giant caramel apples! I hear you on the cold weather, I go to school in Columbia Missouri, smack dab in the middle of the country and walking across campus in 28 degree weather with 30 mph winds makes it EXTRA hard to go to class. Hang in there!

OMG those look incredible! I just discovered, by accident actually, the wonderful flavor combo of white chocolate and peanut butter when I tweaked some oatmeal chocolate chip cookies. I am definitely trying these, they look awesome!

You're funny:) There is a Rocky Mt. Chocolate Factory in this area too, but I haven't gone there too often other than for buying a dog treat for my pup:) I like See's candy! Your bars look yummy!

Nothing better to cheeerrup a cold day than peanut butter and white chocolate. I have a love hate relationship the the weather. But least you have an excuse to buy cute coats and winter boots!

Oh baby, those look way too good. And I feel you on the whole summer/winter exchange... I'm from FL and I moved to Louisiana and whoa. 10 degree winter nights were NOT what I had in mind... I didn't even want to open the front door.
