Snackity Snack

There has been a lot of snacking at my house the past few years months weeks.  I know I instigate it.  It's what I do.  I like to make lots of sweets  to just surround myself with...to have on-hand...just in case.
In case of what, I am not entirely certain, but you know..just in case...
 Knowing that a handful of M&M's is just a few steps away makes me smile... or a spoonful of buttercream....
What?!
  You know you wish you had a spoonful of buttercream a few steps away.
If you didn't wish that, chances are fairly high you wouldn't be interested in this blog.
Schooled!
I don't know why I have this love affair with sugary treats...it's like my love affair with pajamas.
I can't get enough.
I love pajamas...maybe more than my black yoga pants...gasp!
Ok..I took that too far.
So, in the vain of snacks, check it out...
I will tell you that I didn't know that I liked Craisins before I made this, but apparently I do.
I'm not much of a fruit in dessert person, plus "Crasins" just sound gross.
BUT, I will tell you, they are delicious in this fun mix.
Granted they are coated in white chocolate...and isn't everything palatable when it's coated in white chocolate?  But giving Craisins the benefit of the doubt, they tasted good and I don't think a raisin would have worked as well.  Raisins wouldn't have added that slight tartness you need to cut through the sweet and salty going on.
So high five to the "Craisin"...now, we need to find you a new name.
White Chocolate Popcorn
adapted from Southern Living 

2 (3.3 oz bags) microwave buttered popcorn
2 cups salted mixed nuts
2 cups Craisins (dried cranberries)
2 (12 oz bags) white chocolate chips
1 t. cinnamon

Microwave popcorn.  Dump into a large bowl.
Remove kernels that didn't pop. 
Add nuts and Craisins.
Melt white chocolate according to directions on package, either in microwave or with a double boiler.
Pour melted chocolate over popcorn/nut mix.
Using 2 jelly roll pans or wax paper covered countertop (a trick my girlfriend taught me) dump popcorn into a thin layer and sprinkle with cinnamon
 Let sit until chocolate hardens...about 30 minutes.
Store in an airtight container for up to 3 days
I made this specifically for my husband to take to Poker Night...and I worried it wouldn't be "dude" food, but apparently I was wrong...I made a massive bowl and he came home with only a little bit left.
So go ahead and snack away...there's fruit in it, so it's ok ;)

This sounds sooo good. Great idea with the Craisins. They are so tart on their own, but I bet they are great with the white chocolate. I would have never thought to put white chocolate on popcorn but I cannot imagine those two together could be anything but awesome!

I love my black yoga pants so that they can stretch to accommodate my snacks, ha ha. Unfortunately I have given up the snacks lately but my pants are happier! My kids would love this snack.

I've had cereal with crasins coated in white chocolate or some form of yoghurt mixture.. Soooo good!

You got me. I always wish I had buttercream lying around. That stuff is addictive. And so comforting. Not that I eat my feelings or anything...

I made this recipe from Southern Living a couple months back and just used almonds instead of mixed nuts. White chocolate popcorn by itself is great, but when Craisins and nuts are tossed in, it takes it to the next level! (And I'm pretty sure I ate the batch in pajamas!) :-)

White chocolate covered popcorn?? Um... yes please. Also, as a craisin convert myself... they make flavored craisins... I had orange ones and they were epic I put them in a pistachio and white chocolate fudge. epppicccc.

This looks like a great snack! I've never had the white chocolate - popcorn combo. My son has been requesting caramel popcorn lately and I'm getting a little tired of it. We need something new!

I love to have items on hand just in case too....YOU NEVER KNOW....is what I always say, you never know who will stop by and you'll need it, I guess you just never know!
It looks delicious, I really enjoy popcorn and this sounds yummy, I love tart and sweet and salty all in one, oh you have kicked in my "snack tooth"

As soon as I saw this I knew I had to try it! It's really not something I would mess around with at home, but I knew it would be perfect for work. At my restaurant we give an assortment of housemade candies to each table with their check. Every week I do different kinds of candies. Chocolates, caramels, hard candy and with the new popcorn machine the sous chef bought...all kinds of popcorn! I read this post Thursday morning...at 10am I walked into work and pulled out the popcorn maker an white chocolate. I changed the recipe a bit...to put a fine dining twist on it. Instead of craisins, I used dried cherries. For the nuts I used pecans, sliced almonds and pine nuts. I also used whole butter and sea salt before I added the chocolate. The Chef loved it! And so far it has been a big hit with the guests. Thanks for the idea!

I mouth just started watering when I read salty and sweet. Oh my. My guys like plain ol' salted popcorn, so I'm thinking, a batch all to myself? Yes!
