Pumpkin Pie Pop Tart Cupcakes...wink wink

 I have a confession.
Please don't judge me.
Here goes...
{deep breath}
My name is Shelly and I am an over-emoticoner.
I might have just coined a new term, so for those of you who are like, "whaaa?" here's the deal...
I am a frequent over-user of the emoticon.  You know those cute little "faces" on emails and texts made from letters and/or punctuation.
My face of choice is the "wink" ;)
I use and use and use this face.
I'm kind in love with the wink face.
It gives you some freedom with words on a text or email to be like, "Hey, totally kidding, dude".
It kinda comes in handy when there is something that you want to get off your chest but don't want the other person to take it the wrong way.
Here's an extreme case:
"You're a skank ;)"
See what I did there?
I totally insulted someone, but it came across as cute banter.
It's a pretty handy little guy, that wink face.
I do find some emoticons skeevy...for example:

That's supposed to be someone sticking their tongue out.
Who does that?  
That's just yuck.

That guy is evil.  Don't like him either.  It reminds me of Gargamel from the Smurfs.  Don't ask..I'm a freak.  I have hidden childhood trauma that peaks out every now and then.

So, a few weeks ago I told you guys I didn't like pumpkin.
NOW, I will tell you "that I don't like pumpkin ;)"
Since I "winked" at you, you know that the pumpkin has won me over.
Love the wink.
Now I don't love it in a full-fledged pumpkin pie way, but I have matured my palate enough to tolerate...even enjoy it in small amounts.  Did I just sounds as smart as I think I did?  

So, check this out...maybe the coolest thing I have seen in a while...
 I had to buy them when I saw them sitting there on the shelf at my beloved Target.
What to do with them, you ask?
Cupcakes, duh.
 Here are the details...longest title ever...
 Brown Sugar Pumpkin Pop Tart Cupcakes with Pumpkin Cream Cheese Frosting
It will make 12 cupcakes.
Now, enter 8 Pop Tarts.  (4 packs)
First, cut off the crust and eat discard.
Next chop 7 of the Pop Tarts into squares getting about 12 pieces from each.
Chop the last Pop Tart the same way, but reserve for garnish.
Fold the chopped Pop Tarts into the batter.
Bake according to recipe.

For the frosting:
1 8oz block of cream cheese softened
1/4 cup butter softened
1/4 cup pureed pumpkin
1 teaspoon vanilla
1/4 teaspoon of Pumpkin Pie Spice
5 cups sifted powdered sugar.

Cream butter and cream cheese together.
Add pumpkin and vanilla.
Mix until combined.
Slowly add the sugar and pumpkin pie spice on low until combined and then mix on medium for 1 min until smooth.

Pipe on cooled cupcakes.
Garnish with reserved Pop Tart pieces.
See the Pop Tarts baked in?
Pumpkiny, but not too Pumpkiny ;)

Definitely getting a box of these! I bet those 'discrded' ends would be delicious in some pupkin pie ice cream!

I use the :-) face quite a bit, but not the wink. I am also a big user it the exclamation mark!!!

i love emoticon! I use them on everything :) The pumpkin pie pop tarts are good, taste very similar to the brown sugar cinnamon pop tarts. For the icing, what tip did you pipe with, or did you use a ziploc?

You are so creative. I have to make these for my kids. They love poptarts and poptarts in cupcakes...awesome:)

I way over use the plain old smilely. I just think it is so cute and emphasizes how much I like something. I also use LOL way too much. I like the winky face that is cute. I am going to use that now too;)..LOL

when i saw pumpkin pie poptarts i fell in love. i have only one problem. i saw a recipe the other day for rice crispy treats with pumpkin pie spice and candy corn and i can not find it now.

AND I am totally an over-emoticoner! And just like you my emoticon of choice is also the ;). I've often wondered if it annoys some people how much I use it. ;)

trooppetrie ~ I have a recipe for pumpkin spice krispies and a different one with candy corn, but not together...but I will tell you that sounds like an inspired idea!

Kate H ~ I used the 1A Wilton tip on these cupcakes..it's a big round tip, but there is not reason you couldn't use a ziplock!

Yummy!! I love Pop Tarts and cupcakes, so any combo is great with me!!

I am a huge fan of the ;), which is weird because I really hate winks in real life. "Never trust a winker," I always say. I feel like people who wink a lot are trying to distract you from the fact that they are full of crap. True story.

But I definitely over use ;) on a daily basis. I am NOT, however, a fan of LOL. I'm just not.

But, I am a fan of you. And cupcakes.

I just found your blog and I love it! And I too, love to use the wink face, so I feel like we have something in common. Except that you make the cutest cupcakes and baked goods and I make sad little copy cat versions that don't look as nice. But I not so secretly want to be like you.

p.s. my husband loves pop tarts and cupcakes - combined? he would be in heaven

hahaha I can totally relate! I'm an icon addict myself. As a fellow obsessive user myself, I can *like* your wink....;) But I do take offense. My personal favorite is the :P I use it in everything. And I mean everything. Many a time I have included it into emails to profs...and have had to erase it out...but then I'll feel like it *really* should be there. lol Addict. Yes. I admit. :p


And p.s. EVERYTHING is better in cupcake form ;)

I was bummed when I showed up at Target a week ago and they had the nerve to be out. If you offer a product, I think there should be a law that says they have to keep it restocked at all times. ;) I am a emoticon freak at times too. It happens.
Loving your creations as usual. I know my kids would happily gain a sugar rush for a couple of these.

when I saw the pumpkin pie poptarts in Target I went a little Poptart happy and bought 3 boxes. ( I love Pumpkin.haha) Anywho after eating them for a month straight for breakfast I was tired of them. I gave them out to trick or treaters and Still managed to have a box leftover. This was THE best Recipe for cupcakes I have used! Thank You Thank You! :)

I just made this recipe today and it was AMAZING! I even got my Poptart hating Stepdad AND my " I hate poptarts because they are full of sugar and that is utterly disgusting and NOT healthy for you and you shouldn't eat poptarts ever Boyfriend to eat it.(I left the poptart off the top of the icing for him.)Now THAT is success :) LOVE your blog and recipes! :)

Hehehe.. I'm an abuser of emoticons too. Though I use :P a lot too, for basically the same purpose.. to add a 'just kidding' note to everything.
