Popcorn Cake

   
This, my friends, is what you call a "popcorn cake".
If you're not, at the least, intrigued by the idea of a cake made from popcorn, you need to check your pulse!
There is no way that you could frequent this little blog of mine and NOT get a little giddy at the potential of this...
A "cake" made of buttery, salty popcorn, dotted with colorful M&M's and salty pretzel sticks, all held together by sticky, sweet marshmallow.
Yes and please and thank you very much.

I am 36 years old and this is the food that appeals to me.
Don't get me wrong, I eat fruits, vegetables and whole grains because I have to.
But marshmallow covered popcorn is one of those things I eat because I want to.
It's like television...I watch the news because I think it's necessary to have a small grasp of current events and you know..the weather.
But I make sure to get that TV junk food in...because there isn't anything better than watching Bachelor Brad awkwardly asking a gal with vampire fangs if she is "there for the right reasons".
It's called balance y'all.
So since we are here in this judgment free zone, here are the dirty details...
 Prepare a large tube or bundt pan by spraying evenly with cooking spray.
Pop 2 bags of buttered microwave popcorn as directed on the package and dump into a large bowl.
{I used "Butter Lovers" because I am out of my mind}
Pick out the kernels that didn't pop...broken teeth aren't so cute.
Now mix in 2 cups of M&M's and 1 1/2 cups broken pretzel sticks..not crushed, just broken into smaller pieces...
Melt 1 stick of butter over low in a large saucepan.
When melted add in a 16 oz bag of mini marshmallows (8 cups)
Stir until melted and smooth.
Remove from heat and pour over your popcorn mix.
Stir until all the ingredients are combined and then press into the prepared pan.
Cover with foil and let your cake set for at least an hour to cool.
When you are ready to serve the cake loosen sides of your cake from the pan by running a butter knife around the edges.
Flip your pan over onto your serving platter.
Your cake should come out pretty easily.
{You want it to cool completely so it will cut nicely}
Now there's nothing wrong with that!
Store covered tightly for up to 1 day.
(Best if eaten same day)

I made marshmallow treats quite some time back, they were a bit like this and were very yummy!! I bet this tastes AMAZING!!

I finally watched last mondays episode of the Bachelor, and seriously, they need to cut Brad a break. I was about to slap some fools around if I heard "are you ready to commit" or "are you sorry" one more time!!

I was just thinking that would be the perfect 'Welcome home' treat for my fiance after coming home from a 2 week business trip-- but if it's probably only good for a day or so, I should wait until there are more than 2 of us around to eat it. YUM!!! The mother in law of a friend of mine makes these every year for Christmas. I think I look forward to it just as much as she does! LOL Thanks for sharing the recipe! I now have inspiration to use up all the Boy Scout popcorn my hubby bought, the pretzels left over that nobody will eat plain and the marshmallows that never made it into batches of fudge at Christmas. And then of course there's the great excuse to go buy more M&Ms!! :)

My husband LOVES popcorn cake and we make it with the kdis about once a year. He likes to add jujubes to it (I'm worried someone's going to lose a tooth to one of those jujubes) but it is SO sticky sweet delicious!

I love the look of making it in a bundt pan!!

I LOVE this cake!!!! When I first read the title of your post I thought that maybe it would be a cake with "popcorn" made out of frosting ontop of a cake....I had no idea that it would actually be cake made out of popcorn! LOVE it! AND can't wait to make one myself. :-)

Delish!!! Nothing beats chocolate and popcorn with a splash of pretzels and a heaping load of marshmallows!!! I actually make my popcorn balls with popcorn and marshmallows and the powder from the jello packets for color and flavor so this is right up my ally!!

This was my birthday cake every year when I was a child. But my Mom made it with cheese and butter popcorn (my bday is right after Christmas so we always had left over popcorn from those big tins they sell), and mixed in skittles, peanuts, and hot tamales. I don't like chocolate- I know I'm weird!!!! She makes it with whatever ingredients we have on hand. It's still one of my favorites, my Mom surprised me with one last time I was home.

Such a great post. When my kids were little I use to make these all the time, I'm sure they'd like me to make some again. I made many one year and brought one to every party we seemed to go to, everyone got a kick out of them. I like peanuts in them too :) never tried pretzels, the possibilities are endless!!! I colored one pink too.

My mom made these for us on a regular basis when we were young!! She always used those small, gummy raspberry candies as well as nuts. Sometimes she would use Reese's pieces instead of M&M's. Yum! Thanks for reminding me of a fond childhood memory!!
