Chocolate Chip Zucchini Bread - a giveaway

A new season on The Real Housewives of New Jersey has started.
I live in New Jersey and wasn't asked to be part of the cast...which is, I know, I know, really unbelievable.
I think it might be because I am not Italian.
Or maybe because I don't live in a ginormous house with lots of marble.
...or maybe because I have nice friends...
you know, not the kind of friends that pull out my "weave" or call me a "prostitution whore".
MAYBE it's because I have never use the word "matriarch" to describe myself or because I've never called my husband "juicy".
Or it could be because I drive a minivan, not a Range Rover.
Possibly it's because I don't attend events that require me to "walk the runway" in feathered accessories
...or because I don't have a lot of bedazzled clothing.
Maybe I wasn't considered because I am not tan all year long, or have super long french manicured nails?
Should I start practicing the table flip?  or ask my husband to get a questionable job in "real estate development"...you think?
Any way you slice it I don't think I am in the running for newest cast member.
{sigh}

Speaking of slicing...do you guys have a good kitchen knife?
Wait...maybe that's why Bravo hasn't called yet...because I can be trusted with a knife!
Yes, that's totally why...because ya know, those Housewives are crazy y'all!
Anyways, you guys have GOT to try this knife...
The people over Ergo Chef have, in my opinion, developed the perfect go-to kitchen knife.
Their line of knives have the most ideal shape, angle and design for slicing, dicing and chopping.
The ergonomic handle fits perfect in your hand...it just FEELS good to hold.
I think every kitchen needs a good knife..and I wouldn't say this unless I meant it..the Santoku knife has become a staple in my kitchen.
It's like all sciencey and stuff.

Now onto the Zucchini bread...
Actually it's Chocolate Chip Zucchini bread with a Cream Cheese Glaze.
And it's good.
(makes 2 loaves)

2 cups grated zucchini (approx 1 large zucchini or 2 small)
3 eggs (lightly whisked)
1 cup vegetable oil
2 cups granulated sugar
2 tsp. vanilla
1 tsp.cinnamon
3 cups all purpose flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. kosher salt
2 cups semi-sweet chocolate chips

For glaze:
3 oz. softened cream cheese
1/4 cup (plus more if needed) powdered sugar
2 tbsp. milk
Preheat oven to 350°
Spray 2 8x4 loaf pans with cooking spray.
In a large bowl stir until combined zucchini, eggs, oil, sugar and vanilla.
Add flour, baking soda, baking powder and salt.
Mix (about 50 strokes) until incorporated.
Fold in chocolate chips.
Divide the batter equally between the two pans and bake 45-55 minutes, until a toothpick inserted in the center comes out clean.
Let cool and remove from pans.

For glaze combine all ingredients and using a handheld mixer beat together until smooth adding more milk or powdered sugar until the consistency you desire is achieved.

When the loaves have cooled drizzle the glaze on top.
Now back to the knives...the super cool folks over at Ergo Chef want to give you a present.
You get the 7" Santoku knife that I love.
Plus a 3.5" Paring knife for all your smaller jobs.
And they are throwing in an edge guard for each knife to protect the blades (and your fingers) for storage.
All this is a over a $125 value.

To enter for a chance to win all you have to do is go on over to my
facebook page
and click "share" on the giveaway post to share with all your friends.
Leave me a comment here telling me you did it!
One comment only please and leave me your email address so I can get tell you if you won!
Contest ends Sunday June 5th, 11:59 pm
Good luck all you non-Real Housewives of NJ!

This looks fantastic. I need new knives because my current set is about 9 years old and from Target...it is in a world of hurt these days.

Colleen said...

Oh, pick me! I have basically one kitchen knife. I make it do for everything. And let me tell you, it's just not cutting it! (yes, pun was definitely intended.)

I love the look of that zuccini bread! I need a new knife to give to my sister who doesn't have any good knives in her collection!

because im still using the ones i snagged from my parents "extras" bin in the basement...for college.

Karen said...

I also have just one good knife to use in the kitchen. I'd love to expand that! And I love chocolate chips in banana bread, so I'm sure this recipe would be just as good.

My husband and I (who will be married for 9 years in July) are still using the same hand-me-down knives I got from my grandma when I started grad school 12 YEARS AGO!!! We definitely need new knives (it's on our Christmas lists this year :) )

Did it! And this post is sooo meant to be for me. I just grated like 4 zucchini yesterday and hadn't decided what to do with them yet AND I have a random 6 ounces of cream cheese in the fridge that needs to be used. Double batch? I think so.

We were in CA and ate at Villa Blanca and her hubby was there and was very very nice to all the "groupies"..of which I was one.

Well, if it makes you feel any better, the Real Housewives of NY didn't ask ME either. Maybe it's because I'm not a housewife. Maybe it's because I'm too literate. Unclear.

Not sure that I can be trusted with a knife....but that one sounds awesome! I'm actually in the market for a new knife since the one I have is shameful. I shared the link!

I only just stumbled onto your fabulous blog and found your latest post about RSVPs HILARIOUS! One would have thought I WROTE it!

My solution to those non/late RSVPers? I make SURE I put "Regrets Only Please!" on our invites.

Since I've done that, I can't tell you how many people actually reply when they don't have to!

People are weird sometimes.
