ANND she posted this recipe a while back that I am literally OBSESSED with. It's called Ice Cream Bread and you only need 2 ingredients: ice cream and flour..yes, I am serious. That's called genius, people.

Pineapple Upside-Down cake...doesn't it just scream 1975 (well, that and dump cake)? I can remember my Mom making pineapple upside-down cake all the time. I am sure she made it from scratch, but I am lazy and have laundry up to my waist, so I am happy to take a short cut every once in a while, especially if the short cut provides delicious results. However, I am sure that if I poured melted brown sugar and butter over cardboard it would be delicious.
This is a super easy cake to throw together, pop in the oven and impress your guests with little effort.
I suggest using fresh pineapple slices if you can get your hands on them, however using canned is totally acceptable :)

PINEAPPLE UPSIDE-DOWN CAKE
1 box Duncan Hines Yellow Cake Mix
1 1/3 cup Pineapple Juice
1/3 cup Vegetable Oil
3 large Eggs
1 Tablespoon Vanilla
2/3 cup butter
1 2/3 cup brown sugar
1 (20 oz) can Sliced Pineapple or fresh pineapple slices
Maraschino Cherries
Preheat oven to 350.
In a small sauce pan melt the butter.
Pour the butter into into a 9 x 13 pan and sprinkle the brown sugar over the melted butter.
Arrange the pineapple slices in the pan in nice little neat rows. Add 1 cherry in the middle of each pineapple slice.
In a mixer bowl, mix cake mix, pineapple juice, oil, eggs and vanilla on medium speed for about 2 minutes.
Pour the cake batter into the pan over the pineapple.
Bake for 30-45 minutes or until a toothpick comes out clean.
Let cool in the pan for 5 minutes. Invert onto your serving dish.
DIG IN!

Love this cake!! My mom always made it and I haven't had a piece in sooo long. I'm putting this on my list for this Summer!!
Mmmm . . . my mom used to make this all the time when I was a kid. It is so pretty (and yummy).
I always use a cast iron skillet too but I love pineapple upside down cake so much I don't imagine it would matter what it's baked in for me. But I did think the other day that my next must have some bourbon...oh that crust, gooey business around the pineapples with a bit of bourbon. Yum.
Although I typically make cakes today from scratch, this recipe is almost spot on to the one I've used for years with a boxed mix, down to putting in some pineapple juice. Craving now. Thanks for reminding me; one of my favorite cakes ever!

I've never made a cake like this before but I've always wondered about it. Wonderful guest post!
I have made this cake many times and there are always aguments on the size of the pieces, so what I have recently done is bought a big cupcake pan, and made the cake into cupcakes, turns our great and there are no arguments over "she got a bigger piece of pineapple" or that one is bigger.
