I like easy things.
Putting forth my full potential has never been a problem of mine, much to the chagrin of my parents.
Don't get me wrong..I like to do well, but the whole "work" part that goes into the well-doing isn't my thing.
But, every once in a while I surprise myself...
like these yummy Apple Pie Bars.
I am not a pie maker...the reason for this is: I am not a pie eater.
I am not a pie maker...the reason for this is: I am not a pie eater.
AND I cannot master pie crust.
AND I am pretty much against fruit in dessert.
So, since I generally bake things that I like to eat (I know I'm selfish) you won't be catching me baking a pumpkin pie (sorry, dislike) or a rhubarb pie (eeek), or a blackberry pie (all wrong).
Are you sensing a theme here?
I am not a pie person.
Except maybe chocolate chip pie. Ok ~ stay focused.
But, with every rule there is always the exception.
I think these little yummies skate by my "pie rule" because....wait for it...
you can eat it with your hands.
And I'm not talking pie-eating-contest no hands.
I am talking, pie in BAR form.
Did you just hear me? Pie in BAR form.
Seriously, people..a little enthusiasm!
Pie that's easy to eat, and semi-easy to make!
Plus there is Cinnamon Toast Crunch inside, and I love me some Cinnamon Toast Crunch!
Let's get started.
You must make crust.
You'll need:
2 1/2 cups flour
pinch of salt
2 stick cold butter
1 egg, separated keeping both the yolk and the white.

In medium bowl combine the flour and salt.
Add the butter.
Using a pastry cutter, combine the butter, flour and salt until crumbly.
Lightly whisk the reserved egg yolk and add it to the 2/3 cup milk.
Pour egg mix into the flour mix and with your hands combine to make a sticky dough.
Divide the dough into 2 equal portions and flatten into disks.

I'm right there with you girl. I'll take easy over hard any day. And if you ask me, these bars look way better than apple pie! Wish I could have a couple right now.

I'm going to be totally up front with the fact that I love pie. Love it in all capacities. But I do like bars better. Much better. And so these sound. Amazing.

First, love the step by step and words! Cool idea

I just adored cinnamon toast crunch growing up. It was like dessert to me! I know that I would like these bars because unlike you, I adore fruit pies! Thanks for sharing it with me!
These pie bars look SO GOOD! I already printed out the recipe...So fall-ish!
I don't think I can NOT make those.
The glaze looks so pretty. The crushed cinnamon toast crunch is such a great idea. Now that I think about it, it would also be good as part of a streusel topping for muffins. Thanks for giving me that idea. :)
Absolutely d'lish!
I just want to cozy up with a cup of coffee and an apple pie bar. Is that too much to ask?
Seriously good lookin' food. :)
I'd want my apple pie with a twist too. The bars sound delicious and much more convenient.
Can't say I'm a big fan of apple pie (and I'm not huge on fruit in my desserts either...I prefer chocolate over fruit in my desserts for sure), but these cinnamon toast crunch apple pie bars look pretty delicious. I might just have to try and make these sometime soon.
As always, you are the queen of cereal treat creations. I love it!!
